This oven cooked chicken tastes lemony and juicy. You can also cook on
the stovetop to come up with a golden sear and finish the cooking in the
oven. The flavor is enhanced with lemon zest, lemon pepper seasoning, zest
and butter. This is perfect for your family dinner.
1 pound boneless skinless chicken breasts (cut into half)
1/2 cup all-purpose flour
1 tablespoon lemon pepper seasoning
1 teaspoon kosher salt
1 lemon zest
1 lemon, cut into thin rounds
2 lemons, divided
2 tablespoon extra-virgin olive oil
2 tablespoons butter
1/2 cup low-sodium chicken broth
2 minced cloves garlic
Freshly chopped parsley
Preheat the oven at 400 degrees F. Whisk in a medium bowl the lemon pepper; flour, lemon zest and salt. Place the chicken breast in the mixture, toss until fully coated. Heat the oil on medium-high heat in a large ovenproof skillet. Cook the chicken breast in a single layer for five minutes until the bottom is golden. Flip and cook the other side for another five minutes.
In the same skillet, add the broth, butter, garlic, and lemon slices, and bake for fifteen minutes until the chicken is cooked thoroughly and the sauce is slightly reduced.
Pour some of the sauce over the chicken. Garnish with parsley.
